Hi Amanda and Ian
....... just want you to know the flour is really really good :) It has a really light clean flavour with a very good texture for baking, and it makes great muffins and banana cake. I'll be ordering more soon as its much much nicer than the shop stuff. I also think you can't really tell it is gluten free so that is a good thing, compared to other gluten free flour.
